I’ve never tried anything else. Sucanat or Rapadura are similar in texture to coconut sugar so I’m fairly certain that those would work as well but would have a different taste. If you don’t have the dry sugar, the frosting recipe wouldn’t work as far as ending up with a thick, fluffy frosting. Any liquid sweetener (honey, maple syrup, etc.) would probably create more of a glaze than anything else.

Is it ok if I use plain Kefir and leave it soaking on the counter instead of buttermilk?
Yes. That will work also, but may change the flavor slightly.
