Creamy Tomato and Basil Soup Recipe Description: A creamy, satisfying tomato soup. Great with a grilled cheese sandwich! Prep Time: 15 MinutesCook Time: 35 MinutesServings: 6 Difficulty: Easy Recipe Ingredients: 1/2 cup organic, grass fed butter 2 medium organic yellow onions, chopped 4 large cloves of organic garlic, chopped 28 ounces canned organic diced tomatoes 2 1/2 cups homemade chicken or vegetable stock 3/4 cup raw cream* 3/4 cup raw whole milk* 1/4 teaspoon freshly ground black pepper 1/4 cup fresh organic basil, chopped Recipe Instructions: Melt the butter in a large saucepan over medium heat. Add the onion and garlic. Cook, stirring, until onions have softened. Add the tomatoes, chicken stock and pepper. Bring to a boil. Reduce heat to low and cook until tomatoes, onions, and garlic are soft. Then add the half and half and the chopped basil. Using an immersion blender, puree the soup until it's smooth. If you don't have an immersion blender, you can puree the soup in batches in your regular blender. * I tried using just whole milk instead of a combination of cream and whole milk, and it wasn't very good.
